Pre-course outline
The following aspects will be addressed: raw material (proteins, fats, carbohydrates, etc.), changes in these raw materials through processing and shelf life, additives, microbiology, legislation and quality assurance.
Using a fictitious product, for instance a new dairy drink, students will learn what product intrinsic and extrinsic qualities (shelf life, texture) they need to take into account for product development. This knowledge will again be of use to them during the MBA trajectory.
Interactive
Obviously both modules are founded on theoretical knowledge and/or theoretical models.But the pre-courses hold a strong interactive character. By means of practical exercises we ensure the content of the courses is closely related to daily practice. Students will also work with so called mini-cases where they establish the link between theory and practice.
